Ingredients
1 minced onion
2 minced cloves of garlic
400g of beans (red, pinto or butter)
1 teaspoon of sweet chili pouder
1/2 teaspoon of ground cumin
3 tablespoons of coriander
30g of quinoa
120ml of water
salt and pepper to taste.
Guacamole
1 ripe avocado
2 teaspoons of coriander
2 minced cloves of garlic
1 minced onion
1 large tomato
lime (or lemon) juice, salt and pepper to taste
Steps
Heat the water in a pan, bring it to a boil, add the quinoa and bring the stove to a low heat. Once que water is gone cover que pot and set aside.
Braise the onion and garlic on a pan with olive oil, after add the beans, sweet chili and ground cuming. Use a potato masher or a fork to turn the beans into a paste, transfer into a bowl and let it cool.
Once it cools add the quinoa, the coriander, salt and pepper, mixing well after every ingredient. Then mold the paste into compact patties and store them in the fridge for 20 minutes to harden. After this simply heat um a pan with some olive oil and cook lightly cook them to get that tasty and crispy shell.
Guacamole
Cut the avocato in half, being carefull not to pierce the seed, and open it up. Then, with a quick strike, hit the seed with the knife and pull it out.
With a spoon, shovel the fruit into a container, like a mortar, add the onion and garlic, then the rest of the ingredients, mashing well with every addition, and you'll have yourself some tasty Guacamole.
